Encompassing the states of Oregon, Washington, Alaska as well as British Columbia and the Southern Yukon - the Pacific Northwest has a unique food culture and philosophy. The cuisine reflects the ethnic makeup of the region, with noticeable influence from Asian and Native American traditions. Like many of the larger cities of the Pacific Northwest, Seattle is at the forefront of the locavore / farm-to-table / Whole Animal Food Movement. Former restaurant critic of the New York Times, Frank Bruni, wrote of Seattle in June 2011, "I'm hard-pressed to think of another corner or patch of the United States where the locavore sensibilities of the moment are on such florid (and often sweetly funny) display, or where they pay richer dividends, at least if you're a lover of fish." Our Chef/ General Manager Carlos Alfaro boasts that, “Seattle is one of the best cities in the country to source fresh, local seafood. You can find Pike Place Market, an historic open-air market located in downtown Seattle, that offers fresh seafood that has been delivered right of the boat daily.
